What you need

Brush for coating grill with cooking oil
8 pre-soaked skewers
Fruit and dip
16 strawberries
2 kiwi fruits, peeled and cut into quarters
1/2 honeydew melon, cut into 12 pieces
2 tbs low-fat mayo
1/3 cup plain yogurt
2 tbs orange juice
Chicken
2 tbs olive oil
2 tbs chicken broth/stock
2 tbs lemon juice
Chicken meat, cubed

Method:

Using the brush, coat grill or broiler lightly with cooking oil, then heat.
Fruit and dip
Alternate pieces of fruit on 4 skewers. Set aside. In a bowl, mix mayo, yogurt, and orange juice. Set aside.
Chicken
Mix oil, chicken broth/stock and lemon juice in a small bowl. Slide chicken cubes  onto skewers; brush with oil mixture. Grill 10 minutes or until done, turning once and basting with remaining oil mixture.
Remove chicken cubes from  skewers and serve with fruit and dip.
