Ingredients:

1/2 tablespoon of olive oil
1 onion, finely chopped
1 carrot, peeled and chopped
1 celery stick, trimmed and finely chopped 180g chicken, minced
1 tablespoon of plain flour
1 dried bay leaf
1 teaspoon of Worcestershire sauce
1/2 tablespoon of tomato paste
A pinch of salt & black pepper
2 potatoes, peeled and chopped
20g butter
1 teaspoon of milk
(Melted butter, to brush)     

How to make:

  • Heat oil in a saucepan over medium heat, add onion, carrot and celery. Cook until soft, add minced chicken cook for 5minutes.

  • Add the flour and cook around 2minutes. Add bay leaf, Worcestershire sauce and tomato paste. Cook in slow heat until the sauce thickens add salt and pepper. Leave aside.

  • Cook potato in saucepan of salted boiling water until tender. Drain well. Return to the pan with butter. Use potato masher or fork to mash until smooth. Add milk, use wooden spoon to stir until combined. Taste and season with salt and pepper.

  • Preheat oven to 200°C. Spoon chicken mixture into baking dish. Top with mashed potato and use a fork to spread over chicken mixture. Brush with butter. Bake until mashed potato is golden brown. Serve while hot.
